The difference between a best-seller and a warehouse write-off is usually decided in the factory, not the marketing plan. If you are sourcing gummy supplements from an OEM partner, here are the seven technical factors you need to understand before you sign anything.
1. The Gel System: Gelatin, Pectin, or Agar
The gel system is the backbone of every gummy. Gelatin offers a classic chewy texture, a clean melt-in-mouth profile, and cost efficiency, but it is animal-derived and unsuitable for vegan, halal, or kosher lines unless you source a certified alternative. Pectin, usually from citrus peel, gives a softer, more delicate set and is the standard choice for vegan gummies — but it is far more sensitive to pH, calcium, and processing temperature. Agar offers a firmer bite and high heat tolerance but can feel less pleasant in the mouth.
Each system changes your entire formulation: setting temperature, cooking time, drying behavior, and shelf-life profile. Ask your OEM partner which systems they actually run on their production line. A factory that only runs gelatin lines will quote you longer lead times and higher costs for a vegan pectin product — or worse, deliver a poor texture.
2. Sweetener Architecture: Sugar vs. Sugar-Free
Standard gummies rely on glucose syrup and sucrose, which provide bulk, sweetness, and structure in one ingredient system. Sugar-free gummies replace them with polyols such as maltitol, erythritol, isomalt, and xylitol — and each one behaves differently. Maltitol is close to sugar in sweetness and texture but has a laxative threshold that limits total intake. Erythritol provides clean sweetness but almost no bulk, so it must be blended. Xylitol adds a cooling mouthfeel but is highly toxic to dogs, a real liability if your brand sells to pet owners.
Getting the polyol blend right is genuinely difficult. A poorly balanced sugar-free gummy can crystallize, sweat, or cause digestive discomfort that kills repeat purchases. If you are launching a sugar-free line, choose an OEM partner with a proven track record and ask for sensory panel results from previous runs.
3. Moisture and Water Activity: The Silent Killer
Water activity (aw) determines whether your gummy stays soft, grows mold, or hardens into candy rock. The target is typically below 0.60, achieved through controlled cooking, drying tunnels, and precise process timing. Moisture migrates in both directions: too much, and the gummy sticks to the packaging and supports microbial growth; too little, and it turns into an unchewable brick.
Drying is also a throughput bottleneck. High-moisture centers need longer drying times, which slows production and raises unit cost. Ask your OEM how they control aw batch to batch, and whether they hold accelerated stability data in your target packaging format.
4. Active Ingredient Stability
Gummy production is hot, acidic, and moist — the three enemies of many active ingredients. Vitamin C degrades rapidly under heat and oxygen. Probiotics die during cooking unless they are protected or added post-cooking. Oil-soluble nutrients like CoQ10 and vitamin D need emulsification systems to stay suspended and bioavailable. Some actives even interact with the gel system itself, weakening the set or discoloring the batch.
This is why gummy actives are typically overdosed (overage) to guarantee label potency at end of shelf life, and why stability testing is non-negotiable. A serious OEM will run accelerated stability studies at 40°C/75% RH and tell you honestly what your formula can and cannot survive.
5. Acid and Flavor Balance
Citric acid does triple duty — flavor, preservation, and pH control — but it also breaks down pectin’s ability to set. Formulators must balance tartness against gelling chemistry, which is why gummy recipes are finicky in a way that tablet and capsule formulas are not. Flavor systems also need to mask the metallic or bitter notes of minerals and botanical extracts, not just taste good on their own.
Budget for three to five flavor iteration rounds in your development timeline. Each round takes days, not hours, because the gummy must be cooked, set, dried, and tasted in its final form.
6. Anti-Sticking and Coating
Freshly cut gummies are sticky by nature. Factories manage this with vegetable oil sprays, wax-based polishing, or sugar sanding — and each option changes mouthfeel and label claims. If you want a clean “no added sugar” claim, the coating choice matters as much as the core recipe. Sour-coated gummies add another layer: the acid-sugar dusting must be applied uniformly and can accelerate moisture uptake, shortening shelf life.
7. Packaging and Shelf Life
Gummies fail faster than capsules or tablets, so packaging is part of the formula. Moisture-barrier pouches with resealable zippers, bottles with desiccant canisters, and blister packs all behave differently over 24 months. Your shelf-life claim must be backed by stability data generated in the actual pack, at the actual fill weight, under the actual label claim. An honest OEM will refuse to certify a shelf life they cannot prove.
What the OEM Process Should Look Like
A professional gummy OEM project runs through clear stages: (1) brief and formula concept; (2) lab samples and sensory evaluation; (3) pilot batch on the production line — not the lab bench; (4) stability testing in final packaging; (5) scale-up and commercial production with full documentation.
